Savoring the Spring!

     Bocca Felice sprinkled the spring season with groundbreaking breakfasts, Farm-to-Table events, wedding celebrations and Healthy Corporate Cooking Classes... and we continue to feel blessed with every opportunity to share our delicious, healthy, locally-inspired fare with our community.  Please check our our Bocca Felice Facebook page for photos from many of our local events!

On Saturday, May 24th, we return to the Mount Holly Farmer's Market as their summer Chef in Residence!  We are thrilled to join this producer-only market to create dishes on a whim with what the vendors have available that given day!  Check out the Mount Holly Farmer's Market website for the Summer Cooking Schedule, and join the fun!

And from 5:00-6:30pm on Tuesday, May 27th, we will be joining The Peachtree Market for a Local Food Cooking Demonstration as they celebrate their One Year Anniversary!  Congrats Peachtree, and thank you for your efforts to make local foods available to our community!  Hope to see you all there!

Fall Flavors and Festivities

Our Summer has been jam-packed with local food events and culinary adventures with foodie friends from all around our community.  Whether we....

...celebrated the summer's bounty while serving as the Chef in Residence at the Mount Holly Farmers Market 
...or worked with The Farm at Brusharbor to cater a lovely event like the Soil and Conservation 50th Anniversary banquet
...or we taught cooking techniques to reduce stress at the Cabarrus Health Alliance
...or we cooked with children at the Concord Library or our annual Kids in the Kitchen Cooking Camp
...or we had a blast cooking with the Food Policy Council at the Cabarrus County Fair
...our summer has been a ton of fun!

We are heading into fall with a full calendar of events!  We begin with our "Cooking to Reduce Stress and Anxiety"Cooking Class at the West Cabarrus YMCA on Tuesday, September 23rd, from 6:30-8:00pm (class description located under our Corporate Wellness tab).  
     In October, Mike and I will be heading to the Tuscany region of ITALY to celebrate our 15th wedding anniversary!! Our Italian adventure will include taking a Tuscan cooking class at a sustainable farm, and upon our return, I will share the flavors we celebrated there with a "Tuscan Fall" Cooking Class at CUMC
     And we cannot forget to mention how blessed we feel to once again be catering the 3rd annual Harvest Moon Festival to benefit the Piedmont Farmers Market on Friday, October 25th from 6:00-9:00pm at the Old Creamery (for ticket information/purchasing, click here).  
     Our Fall Cooking Class line up will continue with a hands-on "Ravioli Making Class" featuring Sweet Potato Ravioli with Brown Butter Sage Sauce, Pumpkin Bisque and a Pomegranate-Spinach Salad. The descriptions and dates for this class as well as "A Tuscan Fall" will be posted in the Monthly Class tab in the upcoming week-- so stay tuned for an email announcement.

It's Summer Time!

We launched our Summer Cooking Programming this month with our first week back at the Mount Holly Farmers Market as their "Chef in Residence".  It was wonderful seeing so many friends and familiar faces about the market.  We look forward to returning throughout the summer to cook up the bounty of seasonal ingredients that will be available at this special producer-only market.  If you would like more information, please visit the Mount Holly Farmers Market Facebook page.

Spring Into Healthy Cooking!

"Isn't it wonderful when the beautiful fresh green color of spring produce begins to push itself through the surface of the cool earth, reaching for the promise of longer, warmer, sunnier days!" -- Gina  

We launched our Spring Cooking Season with a fabulous class at Kannapolis Library at the end of March.  The class featured a collection of spring recipes to get the participants geared up for the local, seasonal produce arriving soon!      The Charlotte Observer has graciously spotlighted this class in an article in the  Cabarrus Neighbors Section on Tuesday, April 2, titled "Kannapolis cooks learn more about healthy spring cooking"!  To read this lovely article as well as find the spring recipes from the class, please click here.

4th Annual Viva Verde Earth Fest
Our spring cooking season continued on Saturday, April 20th at the 4th annual Viva Verde Earth Fest at North Cabarrus Park.  We had a blast cooking with friends old and new, among all the wonderful activities focused on recycling and green living. We were blessed with a blanket of sunshine, and cool breezes that made it a perfect day to celebrate Mother Earth! 

If you missed this year's festival, you can mark your calendars for next year's Viva Verde Earth Fest to be held on Saturday, April 19th, 2014 And a final "Thank You" to Cabarrus County Government, the City of Concord and the City of Kannapolis for working together to bring such a fabulous event to our community....see you next year!

We thank you for your patience and understanding regarding our delay in updating our webpage and announcing our 2013 schedule (for more, please see the tribute below).

We are thrilled to be launching our new 2013 Healthy Cooking Classes both for our corporate clients, and for all our community groups and friends.  Several of this year's programs were created to support the proactive health initiatives of many health insurance companies, and they include:  

  • "The Fit Fridge"
  • "Cooking for a Healthy Heart"
  • "Down with Diabetes"
  • "Cooking to Combat Stress & Anxiety"

In addition, we are developing a Collection of NEW Cooking Classes to our line up that will be taught throughout the community and will be available to bring to your organization including:  "Bring Back the Family Table", "French Country Cooking", "Spring into Seasonal Cooking", "The Cancer-Free Diet", "Small Budget, Big Flavor!", "Healthy Cooking on the Run", " The Detox Diet-- Eating a Food Rainbow", "The Fundamentals of Cooking", "Why Organic?", "Asian Eats", "What is Gluten?--Food Allergies 101", and returning fan favorite "Taste of the Mediterranean III"!

We are in the process of finalizing the dates for our 2013 programming at Central United Methodist Church (CUMC), and will release those dates under our Month Classes tab at the end of March.  This year we are taking the approach of scheduling for the entire year in advance, in an effort to give you the opportunity to plan your calendar and coordinate cooking with friends more proactively.  Stay tuned!

Even though many projects were put on hold last month, we still managed to enjoy some exciting adventures throughout the community this winter, including cooking up healthy dishes with children at Weddington Hills Elementary School and the Concord Library; healthy holiday cooking at Concord Library and with Charlotte/Meck Seniors; sharing our Immunity Boosting Cooking Class with the employees of Cabarrus County Government and our culinary friends at CUMC; "Healthy New Year" cooking at Harrisburg Library; engaging in a positive customer service activity while cooking with the ladies of the City of Concord Human Resource Department; making fresh ravioli with the 2012 bridal clients of Melissa Hunt Photography; and I can't forget to mention my own personal culinary adventure throughout Belize!

We are looking forward to an exciting year, and continuing on our journey towards greater wellness and dynamic living by bringing healthy, local, seasonal eating to our community.  See you in 2013!

In memory of my father in law, Morris Guthrie. After suffering from an unfortunate fall which severely injured his brain, Morris was unable to recover and returned to heaven on December 30, 2012.  My father in law was an honorable man that raised his son Mike (my husband) to be a loving husband and remarkable father just like he was with his family.  He will be missed by all, and his amazing spirit will be carried on in the lives of generations to come.  We love and miss you Dad G!
